Free range chicken sausage and tomato ‘gravy’

‘Whats for dinner tonight?’ I ask my friend blondie_b who replied ‘Im thinking sausage with tomato gravy, it’s an oldie but a goodie’ now what is this classic that was taught to my friend from her grandmother who has now passed it onto me? It’s simple really, sausages cooked in a pan followed by tomotoes and onions with some flour to make a gravy. With that in mind I thought I would give it a go however rather than u\sing any flour i thought to add some paste and cook it for alittle longer to make a thick sauce. It was delicious with the addition of chilli flakes that gave it the kick i needed to push the warmth through which is perfect for this cold winter. Yum!

Serves 2


  • 1 teaspoon ghee
  • 4 free range chicken sausages
  • 4 Truss tomatoes roughly chopped
  • 2 spring onions thickly slied
  • 1 tablespoon of tomato paste
  • a sprinkling of chili flakes
  • salt and pepper to taste
  • Around 3/4 cup of water

In a pan place ghee and then add the chicken sausages. Cook as normal however pierce the skin to let the juices come out (this adds to the sauce). When the sausages are ready pull them out and place on plate.

In same pan place in the onions and tomatoes and cook til both are wilted. When soft add the tomato paste and stir through. To make it alittle more saucy add half a cup of water and place lid on top. stir. If it starts getting to dry add the rest of the water. when almost done add the sausages back into the pan with the sauce, stir and replace lid.

Wait about 2 mins and it is done!

Serve it up with you favourite vegies cauliflower mash would be great with this. In this instance I had brussels sprouts and bacon as well as roasted veggies in coconut oil.Image148
